Recipe adapted from Pampered Chef's "Honey-Apple Brie Bites".

One September afternoon Krista and I were headed to a small luncheon and wanted to bring something different from the usual dips. These little phyllo cups — filled with a mix of sweet, tart, and crunchy flavors — were the perfect portable treat.

Athens brand mini Phyllo Shells are great, and come pre-baked. You only need to fill them and warm them up, so cook any fillings before assembling.

Ingredients

Ingredients

  • 2 packages (1.9 oz each) Athens mini phyllo shells (about 30 shells)

Suggested fillings (pick one set or mix-and-match):

Classic Fall Apple & Walnut

  • 1 small red baking apple (Cosmic Crisp, Jonathan, Honeycrisp, or Fuji), peeled and diced
  • 2 oz walnut pieces, toasted
  • Hazelnut spread (e.g., Nutella)
  • Brie or mascarpone, cut into small pieces about 1/4 tsp
  • Honey, to drizzle

Pumpkin Pecan

  • 1/2 can Pumpkin puree (canned or fresh)
  • 2 oz pecan pieces, toasted
  • 1/4 tsp Pumpkin pie spice
  • Cream cheese to top, cut into small pieces about 1/4 tsp
  • Maple syrup, to drizzle

Directions

  1. Preheat the oven and toast nuts if using: 400°F (200°C) for 5–7 minutes, or until golden and fragrant. Let cool, then chop finely in a food processor.
  2. Note: Athens mini phyllo shells are fully baked and ready to be filled.
  3. Fill each phyllo shell with your chosen filling. Add diced apples and cheese, adding nuts on top.
  4. Drizzling honey or maple syrup as the last step adds a nice touch.
  5. For cups with cream cheese, warm in oven. About 5-7 minutes at 350°F (175°C). Cream cheese doesn’t make a liquid puddle when it melts.
  6. For cups with Brie cheese, avoid baking to prevent melting. I just don't think the melted cheese looks as appealing!

Yield

30 delicious treats.

Tips

Balance flavors and textures. To balance richness in spreads like Nutella, use fresh fruit and crunchy nuts. For earthy vegetables like pumpkin, add creamy cheese fillings, and crunchy nuts.

In this photo, I didn't add any nuts to the apple cups, but I would next time for added texture.
